    Best Ever! Zucchini Bread

    07/19 /No Comments

I have made a ton of zucchini bread with different variations and have finally found THE BEST EVER! I have made this twice this week already and have requests for more. This recipe is perfect consistency, flavor and balance of spice with sweet. Of course you can always substitute things such as sugar, oil and spices but as this one is it really is perfect! Enjoy and I would love to hear from y’all what you think! Super moist and perfect balance of fresh zucchini and spices!

So far this is one of my favorite nacho recipes! It is a touch of Southern mixed with Mexican flavors which come together in a mouth watering dish! This is a perfect weeknight meal since you use the pork that you grilled (recipe here) over the weekend! Quick and easy weeknight dish that your family is sure to love!

    Shredded Pork Tacos

    07/18 /1 Comment

Oh my word these are amazing! We are typically a 2 to 3 taco per person in our house. I had 5 and lost count how many my hubby ate! So good and easy since the pork is precooked and shredded from the weekend. (recipe here) To heat the pork I pan fried the meat with all of my seasonings and the crispy bits and tender meat was ridiculous good! Top with your favorites like avocado, lettuce, cheese, sour cream, queso, cilantro, whatever your palate desires! Serve with a side of black beans or pintos and enjoy! Pan frying the meat makes these simply amazing! Do not microwave the meat…

    Carolina Style BBQ Sandwich’s

    07/18 /No Comments

You can’t go wrong with BBQ sandwich’s anytime of the week! Serve with slaw and hushpuppies and you have a perfect Southern meal! (Grilled Pork Recipe) There is a somewhat light-hearted feud that exists between the proponents of the two types of barbecue: Western style and Eastern style. What are the differences of the two you ask? Western Style: Western style barbecue (occasionally also referred to as Piedmont style) uses a “red” sauce/dip that is seasoned with ketchup, vinegar, and pepper, along with other spices that vary from recipe to recipe. It is most common in the Piedmont (central) and western areas of the state. This style uses only the…

    Pork The Other White Meat

    07/18 /1 Comment

A couple of weeks ago I cooked a 3lb pork roast on the grill. I didn’t realize how much meat that would render but I soon learned you can eat on that for a week easy! Problem is you don’t want just pulled pork so I was creative and am sharing the many ways you can use pork. Hope y’all enjoy! Side note: I will only use leftovers for three days then they are trashed. I have included three recipes below that I made with this pork recipe. Tickled with how well this turned out! I don't have a smoker but slow cooking on indirect heat produced great results!  Here…

    Wildlife Sanctuary

    07/01 /1 Comment

Last week we had the pleasure of visiting The Wild Animal Sanctuary. The Wild Animal Sanctuary currently operates with more than 9,793 acres of beautiful and natural habitat for its rescued animals to enjoy. Their animals come from horrific captive situations and are rescued and also rehabilitated so they can live and roam freely in large natural habitats with others of their own kind. It was a one of a kind experience and while tears were shed from reading their stories, I am very grateful for the work this organization is doing. If you are in Colorado I highly recommend you visit and if you can donate please do. They…

    The Left Shoe Movement

    06/30 /2 Comments

The Left Shoe movement was created to assist parents to remember they have an extremely valuable and precious life in the car with them. Just as The Baby On Board signs were made for ER personnel the Left Shoe Movement will be a tool to avoid catastrophe.   What is it you ask? It is simple, when you get in the car with your child you take your left shoe off and place in the floor board behind the child’s seat. You will never forget to put your shoe back on and ahah you have a reminder to take your little one out of the car too.   You can…

    Skillet Chicken N Biscuit Pie

    06/19 /No Comments

Okay it isn’t fair to call it Chicken Pot Pie since there is no pie, so I am calling it Chicken N Biscuit Pie! This is so ridiculously easy and quick, perfect for a weeknight meal! Four ingredients is it, not including seasoning of course. I know I will have at least two chicken dishes through the week so on Sunday’s I cook up chicken breasts. Six chicken breasts is enough for two meals for my family. I season them simple with S&P and garlic powder and then whatever dish I am making in the week will continue to season as needed. So on with the recipe! Again this is…

I’m Your Mama Not Your Friend

A few weeks there was a festival in Colorado called 4/20. I am pretty sure that anyone that watches the news is aware of what it is, and though it disgusts me, it is the state we live in. A few days later I watched a disturbing video that has been nagging me for some time now. The video was of a parent and their kid at attendance of the festival. The parent was on stage pouring drinks down people’s throats and obviously high, drunk etc. The part that disturbs me most is the kid (of age now) is a recovering meth addict. I am no one’s judge for we…
