Yia Yia’s Sweet Potato Casserole
AKA Goodness! I was introduced to this sweet potato recipe by my husbands Yia Yia years ago and it is so darn good I can’t stand it! The sweet goodness and crispy topping make this a dish that is not for the faint at heart. Serve it on a dessert plate to truly highlight its deliciousness. It is not diet friendly either but hey, it’s only twice a year right? Hope y’all enjoy this as much as my family does.

A basic recipe only has a few ingredients which include sharp cheddar cheese, mayo and pimentos. The varieties are endless however which can add, hot sauce, jalapenos, onions, and on and on. So anyone that knows me knows that complaining is not my thing.
