AKA Goodness! I was introduced to this sweet potato recipe by my husbands Yia Yia years ago and it is so darn good I can’t stand it! The sweet goodness and crispy topping make this a dish that is not for the faint at heart. Serve it on a dessert plate to truly highlight its deliciousness. A basic recipe only has a few ingredients which include sharp cheddar cheese, mayo and pimentos. The varieties are endless however which can add, hot sauce, jalapenos, onions, and on and on.
