    A couple of weeks ago I cooked a 3lb pork roast on the grill. I didn’t realize how much meat that would render but I soon learned you can eat on that for a week easy! Problem is you don’t want just pulled pork so I was creative and am sharing the many ways you can use pork. Hope y’all enjoy!     Last week we had the pleasure of visiting The Wild Animal Sanctuary. The Wild Animal Sanctuary currently operates with more than 9,793 acres of beautiful and natural habitat for its rescued animals to enjoy. Their animals come from horrific captive situations and are rescued and also rehabilitated so they can live and roam freely in large natural habitats with others of their own kind. It was a one of a kind experience and while tears were shed from reading their stories, I am very grateful for the work this organization is doing.     This is hands down one of my favorite dishes! It is meat and potatoes so what’s not to love, right! Leftovers are minimal and this is super easy to make. I don’t have exact measurements for my seasonings as smell is how I gauge my dishes. You can also substitute minced garlic for garlic powder, or use both. Hope y’all enjoy! Super easy and tasty dish perfect for weeknight dinner. You can also make this a day ahead and reheat.

    I love love love lasagna! We haven’t been able to find a spot I consider great since moving to Colorado so I decided to make my own! I used my cast iron skillet of course and couldn’t be happier with the results. Okay maybe a touch more sauce, cause I like it saucy, would have been my only change. Can’t wait for y’all to try it and let me know what you think! I used regular-boil lasagna noodles since I personally am not a fan of oven ready. This also cuts the time down to an already very time consuming recipe!
