    Nana’s Cornbread Dressing

    11/08 /No Comments

So this is a recipe passed down from my Nana and I have attempted to add directions as best as possible. As you can imagine Southern mama’s tend to cook everything by taste and look so it can be a challenge to get exact measurements. I made this last year for the first time and it was wonderful though a little dry. You will want your mixture wet but not swimming prior to baking. You will want to bake this at 350° for about 30-45 minutes checking frequently. This is a wonderful dish for Thanksgiving and I hope you enjoy it as much as we do!

Famous Chicken Enchiladas, It’s What’s For Dinner!

    10/19 /No Comments

Now that I have your attention! This recipe is the most requested in my house and they are famous in my house and friend group. They can be made quickly if you prepare your chicken in the beginning of the week. Even if you make your chicken the night of these are quick and easy. The way you season your chicken is crucial as you don’t want bland, boring chicken. I season my chicken with S&P, garlic powder, homemade taco seasoning (different post), and a touch of Creole seasoning. I know it seems like a lot but it is amazing mixed with the green chilies in this recipe. I top…

Naples Florida, The Perfect Couples Getaway

    10/18 /3 Comments

We recently visited Naples for a very short weekend for my birthday. While it was not what I was expecting, I did enjoy the area and the food! After a super short flight from ATL we reached our destination RSW airport. As far as airports go this is one of my favorites! It is easy to get in and out of and the car rentals are on site. It took us about 35 minutes to get to our resort and from there the relaxation was on! We stayed at the Bellasera Resort. The lobby is beautiful and the pools are nice, but I am not sure I would consider this a…

    Our Children Are Our Garden

    09/27 /1 Comment

Our children are our garden. They absorb our stress, just as they absorb our peace. They absorb our negativity just as they absorb our joy. And we have the power to control what they absorb, but first, we must tend to ourselves – Rachel Macy Stafford August 2020: This hits home so hard for me right now. I can imagine I am not in this boat alone either. I am not doing a great job of tending to me… I feel like I have been under water since March of last year and slowly drowning. I thought going back to work and having Coop at school would normalize things again,…
