    Skillet Black Eyed Pea Casserole

Another must try! Next time I make it I will season my ground beef & add minced garlic to the veggie mix. My cornbread was also a touch too dark but chasing a toddler around the house makes you forget to check the oven. Was a hit however and leftovers were gobbled up quickly!

Pancakes! What is there not to like? Bread like goodness with syrup! I have learned however, there is an art to making the perfect pancake and while I am not at perfection level by any means, I have discovered a few key points and created a fantastic recipe for tasty, fluffy pancakes! Anatomy of a Pancake (Written by Rick Martinez on Bonappetit) Flour and liquid create the structure in any dough. Mixing the two together develops gluten, the protein that gives elasticity to dough. When making bread, gluten is a good thing; it allows the bread to hold its structure and supports the formation of the gas bubbles created by…

    Brioche French Toast

    04/08 /1 Comment

We are bread lovers no doubt and anytime I can incorporate bread into any of my meals, I have one happy family! Coop is recovering still from croup so we didnโ€™t get to church today. I decided a full breakfast was in order. French Toast, sausage and fruit. I love a hearty bread for French Toast and you canโ€™t go wrong with brioche. It is a bit more expensive, but the texture is perfect! There are a ton of variations to French Toast and this is mine. Hope yโ€™all enjoy!

    Have Baby Will Travel III

    03/20 /2 Comments

Hey y’all! I know it has been a while since I have written anything but we had a death in the family and I had to travel to North Carolina. It has been hectic to say the least but I am back home now and can play catch-up. So last time I wrote about traveling with Cooper he was tiny yet and I was able to use our Bob stroller as well as his Britax carrier car seat. Well he isn’t lil anymore so things changed. It was only he and myself traveling so I had to get a wee bit creative with luggage, car seats etc. I am no…

    Time…

    02/27 /No Comments

For All people are like grass, and all their glory is like the flowers of the field; the grass withers and the flowers fall, but the word of the Lord endures forever.โ€ย  1 Peter 1:24-25ย  Time: The one thing we all have and can be the most abused gift we are given. I am guilty as most of us are and this morning I had my wake-up call that got me thinking. I start my dayโ€™s normally at 6:00am when my expensive alarm clock, Cooper, goes off. I get up, change him, and we set out to the kitchen to make our โ€œcoffeeโ€. I let the pups out and give…

    Lil Hands Breakfast Ideas

    02/27 /2 Comments

My lil dude likes variety when it comes to his food. I donโ€™t blame him being a foodie myself, so I have come up with creative ways to incorporate fruit & veggies into his breakfast. So far they have all been a huge success!   Snowman Banana French Toast:             1 egg Splash of milk 3-4 slices of bread of choice ยฝ banana Cinnamon Cardamom EVOO for skillet Cookie cutter shape of choice, I used a snowman Whisk egg & milk together until blended. Mash banana in the egg mixture. It is okay if lumpy. Push bread slices in the mixture, both sides, until well…
