    Skillet Shepherds Pie

    06/04 /No Comments

This is hands down one of my favorite dishes! It is meat and potatoes so what’s not to love, right! Leftovers are minimal and this is super easy to make. I don’t have exact measurements for my seasonings as smell is how I gauge my dishes. You can also substitute minced garlic for garlic powder, or use both. Hope y’all enjoy! Super easy and tasty dish perfect for weeknight dinner. You can also make this a day ahead and reheat.

    Cast Iron Skillet Lasagna

    05/21 /No Comments

I love love love lasagna! We haven’t been able to find a spot I consider great since moving to Colorado so I decided to make my own! I used my cast iron skillet of course and couldn’t be happier with the results. Okay maybe a touch more sauce, cause I like it saucy, would have been my only change. Can’t wait for y’all to try it and let me know what you think! I used regular-boil lasagna noodles since I personally am not a fan of oven ready. This also cuts the time down to an already very time consuming recipe!

Would You Know What To Do If Your Child Was Choking?

    05/16 /No Comments

The most common cause of nonfatal choking in young children is food. At least one child dies from choking on food every five days in the U.S., and more than 12,000 children are taken to a hospital emergency room each year for food-choking injuries. When Coop was a little over a year old, we had a scare. We were sitting down for supper, listening to music and having a typical night of family time at the table. Lil man was singing and dancing in his high-chair then went quiet. Heath immediately recognized he was choking. I did the finger sweep to see if there was something close that I could…

    Best Pizza Ever!

    04/26 /No Comments

As y’all know I am a homemade kinda cook. After spending way too much on pizza that I didn’t like from restaurants I decided to tackle homemade pizza dough! I have tweaked and merged a few recipes together and voila! Have found the perfect mix. In stand mixer mixing bowl stir together the warm water, sugar & yeast. Attach your dough hook and let stand until the mixture is foamy, about 10 minutes. While the yeast is proofing, combine flour, and salt in a separate mixing bowl. Once the yeast is foamy, add the flour/salt mixture & olive oil to the bowl and turn on mixer to about speed 3…

Another must try! Next time I make it I will season my ground beef & add minced garlic to the veggie mix. My cornbread was also a touch too dark but chasing a toddler around the house makes you forget to check the oven. Was a hit however and leftovers were gobbled up quickly!

Whole Wheat Honey & Banana Pancakes

    04/13 /No Comments

Pancakes! What is there not to like? Bread like goodness with syrup! I have learned however, there is an art to making the perfect pancake and while I am not at perfection level by any means, I have discovered a few key points and created a fantastic recipe for tasty, fluffy pancakes! Anatomy of a Pancake (Written by Rick Martinez on Bonappetit) Flour and liquid create the structure in any dough. Mixing the two together develops gluten, the protein that gives elasticity to dough. When making bread, gluten is a good thing; it allows the bread to hold its structure and supports the formation of the gas bubbles created by…

    Brioche French Toast

    04/08 /1 Comment

We are bread lovers no doubt and anytime I can incorporate bread into any of my meals, I have one happy family! Coop is recovering still from croup so we didn’t get to church today. I decided a full breakfast was in order. French Toast, sausage and fruit. I love a hearty bread for French Toast and you can’t go wrong with brioche. It is a bit more expensive, but the texture is perfect! There are a ton of variations to French Toast and this is mine. Hope y’all enjoy!

Hey y’all! I know it has been a while since I have written anything but we had a death in the family and I had to travel to North Carolina. It has been hectic to say the least but I am back home now and can play catch-up. So last time I wrote about traveling with Cooper he was tiny yet and I was able to use our Bob stroller as well as his Britax carrier car seat. Well he isn’t lil anymore so things changed. It was only he and myself traveling so I had to get a wee bit creative with luggage, car seats etc. I am no…
