Crock-Pot Chipotle Chicken Soup
I have found another winner! This Chicken Soup made in the Crock-Pot is not only amazing, but so easy! Monday’s are my long days at work so having dinner ready by the time I get home, is a must. I love that pureed beans take the place of broth and there is so much flavor in this dish! Enjoy y’all!
Chipotle Crock-Pot Chicken Soup
Wonderfully tasty chicken soup that the whole family will love!
Equipment
- Crock-Pot
- Crock-Pot Liner (lifesaver)
- Food Processor
Ingredients
- 3 Boneless Skinless Chicken Breast Thawed and seasoned with S&P & 1/2 of chipotle seasoning
- 2 cans Goya Cannellini Beans
- 1 can Whole Kernel Corn
- 1 can Sweet Cream Style Corn
- 1 can Black Beans
- 1 can Rotel Tomatoes I used mild but chipotle or Mexican style would be awesome too!
- 2 packets Slow Cooker Chipotle Chicken Seasoning
Instructions
- Line your Crock-Pot with liner and place seasoned Chicken Breast in the bottom
- Puree both cans of Cannellini Beans and add to Crock-Pot
- Add remaining ingredients as they are, do not drain
- Stir ingredients to blend seasoning and cook for 6-8 hours on low
- Fork shred chicken at the end of cooking in the Crock-Pot
Notes
I topped my soup with tortillas, avocados, cheese & sour cream. It is a very versatile dish and everyone can garnish as much or little as they would like!
Homemade Chipotle Seasoning
If you can't stand the thought of store bought, here is a homemade recipe.
Ingredients
- 1/2 tblsp crushed Chipotle pepper
- 1 tblsp Chipotle chili powder (or any other chili powder)
- 1 tblsp Smoked Paprika
- 1 tsp Ground Cumin
- 1 tsp Garlic Powder
- 1 tsp Oregano
- 1 tsp Ground Coriander
- 1/2 tsp Sea Salt
Instructions
- Mix all ingredients together in a small bowl
- Store in container for up to 2 months
