Not Your Same Ole Oatmeal
I have been experimenting the past couple of days with ways to make oatmeal for Coop. He is very hands on with his food and a bowl of oatmeal just won’t do. I have come up with two great recipes and both have been a success! Let me know how they work out for y’all and enjoy!
Blueberry Banana Oatmeal Bake
Perfect for lil hands and just the right amount of sweetness.
Servings 6
Ingredients
- 2 1/4 cups Quick Rolled Oats
- 1 tsp Baking Powder
- 1/2 tsp Cinnamon
- 1/4 tsp Salt
- 1 large Banana mashed
- 3/4 cups Almond Milk can use regular milk
- 1/4 cup Honey
- 1 tsp Vanilla extract
- 1 cup Blueberries
Instructions
- Preheat oven to 350 degrees. Grease an 8x8 pan.
- In a large bowl combine dry ingredients
- In a different bowl combine wet ingredients and banana (not the blueberries yet)
- Mix wet and dry ingredients and fold in blueberries
- Pour mixture into pan and smooth out
- Bake at 350 for 30 minutes until lightly golden
Blueberry Apple Oatmeal Muffins
Again a wonderful breakfast item which is super kid friendly!
Ingredients
- 2 large Eggs
- 1 cup Milk I use almond
- 1/4 cup Pure Maple Syrup
- 1 tsp Vanilla
- 3 cups Quick rolled oats
- 1 tsp Baking powder
- 1 tbsp Brown Sugar
- 1 tsp Cinnamon
- 1/4 tsp Salt
- 1 cup Blueberries
- 1 Apple I use GS peeled and diced small
Instructions
- Preheat oven to 350 degrees and grease muffin pan
- In a medium saucepan saute apples and blueberries until apples are a lil soft. I used a lil bit of water to saute but can use maple syrup as your liquid.
- In a large bowl combine dry ingredients
- In a different bowl combine wet ingredients (minus fruit)
- Mix wet and dry ingredients
- Using a scoop add mixture to muffin pan
- Top mixture with your fruit and gently press to mix in
- Bake 350 degrees for 25-30 minutes or until lightly golden
- Remove from oven and let stand for 5 minutes before transferring to wire rack
