3Boneless Skinless Chicken BreastThawed and seasoned with S&P & 1/2 of chipotle seasoning
2 cans Goya Cannellini Beans
1canWhole Kernel Corn
1canSweet Cream Style Corn
1canBlack Beans
1can Rotel TomatoesI used mild but chipotle or Mexican style would be awesome too!
2packetsSlow Cooker Chipotle Chicken Seasoning
Instructions
Line your Crock-Pot with liner and place seasoned Chicken Breast in the bottom
Puree both cans of Cannellini Beans and add to Crock-Pot
Add remaining ingredients as they are, do not drain
Stir ingredients to blend seasoning and cook for 6-8 hours on low
Fork shred chicken at the end of cooking in the Crock-Pot

I topped my soup with tortillas, avocados, cheese & sour cream. It is a very versatile dish and everyone can garnish as much or little as they would like!
