Blueberry Apple Oatmeal Muffins

Again a wonderful breakfast item which is super kid friendly! 


  • 2 large Eggs
  • 1 cup Milk I use almond
  • 1/4 cup Pure Maple Syrup
  • 1 tsp Vanilla
  • 3 cups Quick rolled oats
  • 1 tsp Baking powder
  • 1 tbsp Brown Sugar
  • 1 tsp Cinnamon
  • 1/4 tsp Salt
  • 1 cup Blueberries
  • 1 Apple I use GS peeled and diced small


  1. Preheat oven to 350 degrees and grease muffin pan

  2. In a medium saucepan saute apples and blueberries until apples are a lil soft. I used a lil bit of water to saute but can use maple syrup as your liquid. 

  3. In a large bowl combine dry ingredients

  4. In a different bowl combine wet ingredients (minus fruit)

  5. Mix wet and dry ingredients 

  6. Using a scoop add mixture to muffin pan

  7. Top mixture with your fruit and gently press to mix in

  8. Bake 350 degrees for 25-30 minutes or until lightly golden

  9. Remove from oven and let stand for 5 minutes before transferring to wire rack
