Famous Chicken Enchiladas

  • 6 Flour Tortillas
  • Shredded Chicken usually about 3 cups
  • 3 tbsp Butter
  • 3 tbsp Flour
  • 2 cups Chicken Broth
  • 1 cup Plain Yogurt
  • 1 can Diced Green Chilies (Medium) can use mild
  • 1 bag Mexican Cheese Blend
  • to taste S&P
  • to taste Garlic Powder
  • to taste Creole Seasoning
  • to taste Homemade Taco Seasoning can use chili powder


  1. Preheat oven to 350 degrees and grease a 9x13 baking dish.

  2. Season chicken with all seasonings. I am a season to taste kind of cook so get it where you like it. 

  3. Scoop a large spoon of chicken into tortilla and add cheese. Roll tortillas and place in pan.

  4. In a sauce pan melt butter, stir in flour and cook for about a minute. 

  5. Add broth and whisk until smooth. Cook until thickens on medium heat. 

  6. Remove from heat and add yogurt, green chilies and additional S&P. 

  7. Pour mix over your tortillas and top with cheese. 

  8. Bake for 20 minutes and broil on low for about 5 minutes to brown the cheese.
