Super Easy Oatmeal Lactation Cookies

I have now tried a dozen or so cookies that are supposed to help with lactation. The problem is I can never eat more than one to see if they really work because they taste so awful! So, I ventured on my own and made some amazing oatmeal cookies with a ton of ingredients that assist in increasing milk. Today is my first day eating them so not sure if they are working but man they help my mood if nothing else! They are tasty and not too sweet so I don’t feel guilty eating two or three through the day.

 

Ingredients:

1 cup flour

¼ tsp. baking powder

½ tsp. baking soda

½ tsp. cardamom

¼ cup sugar

¼ cup brown sugar

½ cup butter or margarine, softened

2 Tbsp. milk (I use almond milk)

1 egg

6 packets of Quaker SuperGrains Apple & Cinnamon (or any flavor you like)

 

Preheat oven to 350 degrees F and line cookie sheets with parchment paper. In a large bowl, mix together dry ingredients minus the sugars.

In a separate bowl mix white & brown sugar, butter/margarine, egg and milk. Gradually mix in the dry ingredients till combined.

I use a two-inch cookie dough scooper or a tablespoon to scoop out dough and place on parchment paper. Flatten them down just a touch once on cookie sheets. Bake for 10-12 minutes, or until the cookies are lightly browned. Cool on cookie sheet for 2-3 minutes before transferring to a wire rack.

I use Quaker Instant Oatmeal SuperGrains because it has oat, barley, flaxseed, quinoa and cinnamon added. All of these promote lactation. You can also make your own instant oatmeal and use vs. packaged just make sure you use quick oats.
